The Oh-So-Fresh Cocktail

The oh-so-fresh cocktail you never knew you needed, created by yours truly.

Here’s what you’ll need:
  • 1 cucumber
  • 1.5 cups of ice
  • 3 lemons, for lemon juice
  • 1/4 cup of water
  • 1 tbsp of light agave nectar
  • Mint leaves, ~4 stems (or pieces)
  • 4 tbsp of vodka
  • Ginger beer
  • Cayenne pepper, optional
Instructions:

Step 1

Cut the cucumber into slices. (I like cucumber peel, but it’s up to you on that part.)

Step 2

In a blender, add the ice, slices of cucumber, lemon juice, and the water. We will call this the cucumber puree. Set aside for one minute.

Step 3

Fill up a mixer with crushed ice about 3/4 of the way….yes, ice must be crushed. Add the agave nectar and mint leaves. Muddle the ingredients for about one minute.

Step 4

Fill up the mixer again with more crushed ice since a portion of it melts during the muddling process. And then add the vodka and shake, shake, shake what yo’ mama gave you. (By the way, this is only for one serving. You’ll have to repeat this step for a second drink 😉 )

Step 5

In a cocktail glass, pour the alcohol mix. Add 1/2 cup of cucumber puree (aka 8 tbsp). Gently stir the ingredients to blend well.

Step 6

Top with a small splash of ginger beer and sprinkle cayenne pepper for a little kick. And enjoy!

OK – so watch out with this drink. I cannot believe it has 4 tbsp of vodka and I cannot taste the alcohol – at all.

This oh-so-fresh cocktail reminds me of a green juice I make on the regular. It’s definitely the “fun” version of a green juice so pour up! I am so happy with the results, I hope you enjoy! If you do end up making it, please share, and let me know what you think.
