Strawberry Mint Margarita

Can you believe Cinco de Mayo is only one week away?!? Sayyyy wuuuuuut?!? Ironically, I’ve created my version of a tasty strawberry mint margarita just in time for the occasion. This recipe was created last week on a whim and shared the process through Instagram stories! I had no clue how it would turn out but thank goodness it turned out to be delish!

With a few minor changes from last Thursday (see IG highlight, strawberry margarita, for the action)…

Here’s what you’ll need: 

  • 1 cup of fresh strawberries
  • 3 tbsp of fresh squeezed lime juice
  • 2 tsp of light agave nectar
  • 3 tbsp of tequila (Campo Azul is quite delish)
  • Mint leaves
  • Ice
  • Tajin
  • Round slices of strawberries and limes, for garnishing

Steps to make Strawberry Mint Margarita:

Step 1

In a blender, add 1/2 cup of ice, 1 cup of fresh strawberries, 3 tbsp of fresh squeezed lime juice, and 3 mint leaves. Blend until smooth. (This strawberry juice should be enough for ~3 drinks.)

Step 2

In a mixer, add ice about 3/4 of the way, 3 mint leaves, and 2 teaspoons of light agave nectar. Muddle the ingredients for a few seconds, I use a metal straw for this part. (The ice will melt a bit.) Afterwards, add 7 tablespoons of strawberry juice and 3 tablespoons (aka one shot) of tequila. Seal the mixer and mix the ingredients. (This is enough for one drink.)

Step 3

Next, prepare a short glass by dipping the rim in lime juice first then tajin. Add a few slices of strawberries and limes inside the glass. Next, add the margarita mix, and enjoy!
