Sharing tonight’s delicious dinner because why not?!? Most of us are at home cooking and exploring new (and old) recipes in the kitchen so maybe you can add this one to the list! It’s super easy and tasty.
Here’s what you’ll need:
- Beef Bottom Round Rump Roast, ~2.8 lbs
- 2 tbsp of olive oil
- 1/2 tsp of salt
- 1/2 tsp of pepper
- 4 large garlic cloves, peeled and sliced (this amount will depend on the weight/size of the roast)
- Cooking twine
Steps to make Garlic Roast Beef:
Heat the oven to 325 degrees. On a flat baking pan, prepare the roast beef by making semi-deep slits all over, yes, including the bottom and sides. Next, cut three pieces of twine strands and tightly tie them throughout the roast – one at each end and one in the middle.
In a small bowl, combine the following ingredients: olive oil, salt, and pepper. Whisk until well blended.
Peel and cut the garlic cloves. The goal is to cut thin slices so they are able to fit into the slits of the roast beef.
Next, rub in the olive oil mix all over the roast beef and then slide garlic slices into the slits. Tips: Be careful handling the roast beef after the garlic slices are in, they may pop out if you make sudden movements. Also, it’s okay if the slices are sticking out a bit.
Place the roast beef (fatty side up) directly on the rack, right in the middle of it. Place the flat baking tray on a lower rack to catch drippings.
The baking time is honestly up to you; it all depends on how rare (or cooked) you prefer your meat. I am going to link a meat temperature guide here for your reference. It’s going to be necessary to use a kitchen thermometer, I’ll link the one we use here. It’s like $3 and works just fine.
For reference, I checked on the meat every 35 minutes to ensure we didn’t under or overcooked it. Since our preference is medium, I was shooting for the thermometer to read 130 degrees. Just five degrees under the minimum temperature (135 degrees) Here’s why…
Once the roast beef is cooked to your taste, remove it from the rack and wrap it in aluminum foil. Let it rest for 20 minutes. During this process, it’ll continue to cook, hence, why I took it out of the oven before it reached the desired temperature. 🙂
