Planning a weekend in Fredericksburg, TX turned out to be the perfect birthday surprise for the husband.

For Jose’s birthday this year, I wanted to plan something intentional. Not a massive trip that required flights and complicated logistics, but something romantic, relaxing, and easy enough for a quick escape from Houston.

Even with just a one-night stay, the Texas Hill Country has a way of making you feel far removed from the city. Rolling hills, wineries tucked into the countryside, scenic drives, slower mornings, and long conversations over wine; it’s the kind of trip that helps you disconnect for a bit.

Our last trip to Fredericksburg was back in 2020, so returning years later made this visit feel especially nostalgic. While some parts of the winery scene have changed over time, the charm of Fredericksburg is still very much there.

Driving from Houston to Fredericksburg

One of my favorite parts of this trip was the drive itself.

We left Houston around 7:30 in the morning and arrived at our first winery around 11:30 AM, so the drive took us roughly four hours at a comfortable pace.

If you’re driving from Houston, I highly recommend leaving early. Not only does it make the drive feel more relaxed, but you also get more time to enjoy Fredericksburg once you arrive.

We visited in mid-May, which I personally think is one of the best times to plan a weekend in Fredericksburg, TX. The mornings were crisp, the weather stayed comfortable throughout the day, and the Hill Country air felt noticeably less humid compared to Houston.

Those cooler mornings alone made the trip worth it for me.

Starting the Weekend with Bubbles at Heath Sparkling Wines

We intentionally started the birthday weekend with bubbles, which immediately set the tone for the trip.

And wow; the sparkling wines here were so good.

So good, actually, that we ended up becoming members before leaving, haha. It felt like a no-brainer after the tasting experience we had.

The tasting was $40 per person, and from what we understood, the tasting fees were essentially applied toward the membership structure. We ended up paying the remaining difference after the tasting credits were applied, which made joining make sense considering we already knew we wanted to come back.

One thing I appreciated about Heath was how welcoming everything felt. The property is gorgeous, the service was warm, and the sparkling wines completely surprised us in the best way.

If you enjoy champagne-style wines, this stop deserves a place on your Fredericksburg itinerary.

Something else worth mentioning; Fredericksburg wineries feel much more membership-oriented now compared to our visit in 2020.

Back then, patios felt much more accessible to general visitors. During this trip, we noticed that many patios are now primarily reserved for members. That said, we never felt unwelcome as non-members during our trip. The wineries still accommodated us well, even without reservations.

Another thing families should know is that many wineries no longer allow children. In 2020, I distinctly remember seeing kids throughout several properties. Policies vary by winery now, so I strongly recommend checking ahead of time if you’re traveling as a family.

Grape Creek Vineyards Was Stunning

Our second stop was Grape Creek Vineyards, and the architecture alone makes this winery worth visiting. It’s a short walk from Heath so it only made sense to make this our second winery.

The property has this Tuscan-inspired feel that photographs beautifully from almost every angle. Between the stone buildings, vineyard views, and landscaping, it easily became one of the prettiest wineries we visited during the trip.

The staff here were especially welcoming, and we loved how generous they were with the tastings.

One thing I do want to note for anyone planning a weekend in Fredericksburg, TX; we did not make reservations for any of the wineries we visited. Surprisingly, everything worked out perfectly.

We experienced small waits here and there, but nothing unreasonable. Every winery still accommodated us without issue, which made the trip feel very relaxed and flexible overall.

Another huge plus was that the wineries still allowed guests to walk around and take photos of the vineyards and property grounds, even without memberships. As someone who absolutely wanted vineyard photos during this trip, I appreciated that a lot.

Signor Vineyards Was My Favorite Winery Property

As far as the actual property goes, Signor Vineyards was my personal favorite.

The landscaping, garden atmosphere, and overall setting made it feel peaceful and romantic.

This stop became even more memorable because we randomly ran into my cousins there, which made the afternoon extra fun.

Instead of doing another formal tasting, we opted for a charcuterie board and glasses of wine on the patio.

Out of all the wineries we visited, this was definitely the busiest, but thankfully they were still able to accommodate us outside.

If your goal is beautiful scenery and a relaxed atmosphere, Signor absolutely deserves a visit.

Dinner at Jack’s Chophouse

For dinner, we went to Jack’s Chophouse, which had been highly recommended to us by my brother and sister-in-law.

This was the only reservation I made during the entire trip because I didn’t want to risk not getting in for dinner.

The ambiance was great, the live music added the right energy to the evening, the wine selection was solid, and the service overall was excellent.

We ordered the tomahawk steak, which looked incredible visually. Unfortunately, ours was noticeably under-seasoned and missing salt, which was disappointing considering how excited we were for it.

That said, I still want to be transparent about our experience because everything else throughout the evening was good. Based on their consistently high reviews and reputation, I would absolutely give them another shot because it felt more like a small kitchen hiccup than a reflection of the restaurant overall.

Ending the Night at 78624 The Bar

We ended the night with cocktails at 78624 The Bar, which was the perfect final stop for the evening.

Moody lighting, delicious cocktails, and great service; exactly the kind of cocktail bar I love finding while traveling.

I would go back.

Coffee at Caliche Coffee the Next Morning

The next morning, we grabbed coffee at Caliche Coffee Bar & Ranch Road Roasters.

The coffee itself wasn’t necessarily my favorite, but to be fair, I’ve completely spoiled myself with my local Houston coffee spots and homemade coffee routines at this point, haha.

That said, it’s still a cute and popular breakfast spot and worth visiting if you’re spending the morning walking Main Street.

Speaking of Main Street, one thing I immediately noticed compared to 2020 was how much wider it felt overall. Fredericksburg still maintains its small-town charm, but the area does feel busier now compared to what I remembered from our last visit.

Honeysuckle Was Worth the Stop

On our drive into Fredericksburg, we noticed a beautiful two-story restaurant called Honeysuckle and made a mental note to stop there on the way back to Houston.

I’m so happy we did.

The Hill Country views alone made the stop worthwhile, but the chicken fried steak ended up being one of my favorite meals from the entire trip.

If you have extra time during your drive, I highly recommend adding this stop to your itinerary.

What I Wore

What I Wore in Fredericksburg

For winery hopping, I wanted something comfortable enough for walking through vineyards and patios while still feeling feminine and put together for photos.

I ended up wearing a soft butter yellow top paired with a floral wrap skirt that felt perfect for spring in the Texas Hill Country. I kept the accessories simple with brown heels, a small crossbody bag, delicate jewelry, and loose waves.

The entire outfit felt light, comfortable, and ideal for the crisp Hill Country mornings and warmer afternoons.

If you’re planning outfits for Fredericksburg wineries, I definitely recommend breathable fabrics and comfortable shoes because you’ll likely spend most of the day outdoors.

Is Fredericksburg Worth Visiting in 2026?

I would still absolutely recommend Fredericksburg to anyone looking for a romantic Texas getaway, especially for birthdays, anniversaries, girls trips, or wine weekends.

That said, the winery culture has definitely evolved since our last visit in 2020.

Winery memberships seem to play a much bigger role in the overall experience now, particularly when it comes to patio access and reservations.

Still, even without winery reservations, we were accommodated everywhere we visited with only small waits throughout the day. The wineries also still allowed visitors to walk the properties and take photos, which I appreciated because the vineyard scenery is part of what makes Fredericksburg so special.

Fredericksburg still maintains the same relaxed Hill Country charm that makes people want to return in the first place.

Things to Know Before Planning a Weekend in Fredericksburg, TX

  • One night was enough for a quick reset trip, but two nights would allow for a slower pace.
  • Mid-May is a beautiful time to visit before peak summer heat.
  • Most wineries now feel much more reservation and membership oriented.
  • Many wineries no longer allow children.
  • Uber and Lyft are not realistic.
  • If you plan on drinking throughout the day, it’s better to either book transportation or pace yourself.
  • Main Street itself is walkable and very charming.
  • Winery reservations help, but they are not always necessary.
  • Most wineries still allow visitors to walk around and take vineyard photos.
  • Fredericksburg does feel busier now compared to a few years ago.

Final Thoughts

This birthday weekend reminded me that some of the best trips are often the simplest ones.

A peaceful weekend in Fredericksburg surrounded by perfectly manicured landscapes, yummy wine tastings, and intentional time together ended up being exactly what we needed.

And yes, we’re already talking about going back this fall season. 🤍
