
I am SO excited to share the best avocado toast recipe you will ever taste. That is if you love chimichurri sauce 😉
This recipe was inspired from a restaurant we visited in Park City, Utah last year. With only a few simple steps, you can recreate this #sojohome favorite. Bon Appétit!
Here is what you’ll need
Servings: 4 | Approximate Prep Time: 20 minutes
Ingredients for the chimichurri sauce

- 1 cup of fresh parsley, minced
- 5 teaspoons of minced garlic
- 2 tablespoons of fresh (or dried) oregano leaves, minced
- 1/2 cup of extra virgin olive oil
- 1/4 cup of red wine vinegar
- Salt, to taste
Ingredients for the avocado spread

- 1 large avocado (or two small ones)
- 1 lime, squeezed
- Salt, to taste
Ingredients for the avocado toast:

- 4 eggs (or more, for more servings)
- Sourdough bread
- Olive oil, to taste
- Broccoli microgreens, to taste
- Salt, to taste
- Red pepper flakes, optional
How to Make the Best Avocado Toast Recipe
Step 1 – Make the Chimichurri Sauce

Begin with the chimichurri sauce so the ingredients can sit together for a few minutes prior to preparing the avocado toast.
In a small bowl, add the fresh minced parsley, fresh (or dried) minced oregano, minced garlic, olive oil, red wine vinegar, and a sprinkle of salt. Whisk the ingredients together until well blended then set aside.
Step 2 – Make the Avocado Spread

This delicious and SIMPLE avocado spread pairs well with many recipes. In a small bowl, add the avocado, freshly squeezed lime juice, and a dash of salt. Mash the avocado until it is creamy and spreadable. Do a taste test to see if the spread needs more lime juice and/or salt. Set aside.
Step 3 – Prep the Avocado Toast

In a small pan, add olive oil. After the oil is heated, add the eggs and season them with salt. Cook to your own personal preference – I prefer scrambled eggs because they’re so easy to make.
While the eggs are cooking, add the slices of sourdough bread to the toaster. While the eggs are cooking and the bread is toasting, spread some of the chimichurri sauce on a plate.
Once the bread is ready, place it on top of the chimichurri sauce. Next, spread avocado across the bread and then add your eggs. If you like a kick of spicy, sprinkle some red pepper flakes on top of the egg. Top with broccoli microgreens – and voila!
