Who doesn’t love a good coffee/work date? There is something about a coffee shop that gets my creativity flow going. Ever since I was in college, I would hunker down at my local Starbucks and study for hours upon hours until wee hours of the night. I know that doesn’t sound very healthy, or inexpensive, but I had little hacks to get by, haha. Happy, happy Monday!!! I hope you had a wonderful weekend. We spent most of ours at home and ventured out a bit on Saturday. We are still in the process of deciding on an aesthetic for the master bedroom so we went to Pottery Barn to see if anything spoke to us. (Apparently Jose hates the comforter set I purchased last year.) Afterwards, we were craving gorditas, a Mexican food, so we looked up places in the area and ended up finding a hidden gem called 100% Taquito. Happy, happy Monday! Hope you had a wonderful weekend. Ours was quite the adventure. I was actually able to pull off a surprise brunch for the hubby! He just turned 30 and thought it was a milestone birthday that required a lovely brunch with his favorite people. (I was so anxious about this party…like worst than my wedding day! I’ll save this story for another time.) Anyway, my sister and brother-in-law were also visiting from Dallas so we drove to Galveston yesterday and enjoyed a beautiful day by the ocean. Oh man how I missed the beach. I know it isn’t the prettiest beach on earth, but honestly, I don’t care. I’ve visited NYC five times in the last few years (three times this year) to feel comfortable enough to compile a list of my favorite things to do and places to eat. I am actually in NYC as I type this blog post so that’s pretty cool.

Hope you are having a great day! I know I have been a little out of touch lately because I decided to (partially) unplug from social media during our anniversary trip…and then a few days after it ended.
It was sooo nice but happy to be back!
If you have an appreciation for nature’s natural beauty, you must add Utah to your travel list. This beautiful state has so much to offer! The first time I got a taste of the snowy mountains was when I visited Colorado for the first time in January 2015. After leaving Colorado, I felt like I belonged there. The truth is, nature has me wrapped around its beauty and Utah did not disappoint in this department. Let’s jump into the highlights!
This was my third time visiting New York City (NYC), and I must be honest, I still feel like I have an entire list of things to do next time I visit! There is SO much to see and do, it can be overwhelming. I do believe there is a timeframe (or a season) for certain activities. For example, if you go around Christmastime, you must do Christmas-themed activities. Or let’s say you visit in the fall, you should probably rent a bike and cross over the Brooklyn Bridge. Anyway, for today’s blog post, I am giving you ideas on what to do next time you visit the Big Apple in the spring/summer.
