Cilantro Lime Rice Recipe

Where are my rice lovers?!? This one is for you! I shared this side dish recipe last week and received requests to share how to make it. It’s quite delish and easy to make. (And I must admit, Jose’s favorite rice. Yep, you heard it here first. He loves this rice over the Mexican rice! *gasps*)

Needless to say, it’s a favorite in the #sojohome and I am so excited to share it with you!

Ingredients needed:

Here’s what you’ll need for ~4 servings

  1. 1 tablespoon of oil
  2. 1 garlic clove, finely chopped
  3. 1/4 cup of onion, finely chopped
  4. 1 cup of rice, rinsed
  5. 2 – 2.5 cups of water (or enough to cover 1/2 an inch above the rice)
  6. 1 tablespoon of chicken bouillon
  7. 2 – 3 limes, to taste
  8. 1/2 cup of cilantro, finely chopped (optional)
  9. 1/2 cup of matchstix carrots, finely chopped (optional)
Step-by-Steps Instructions:

Step 1

Over low heat, in a medium pan, heat the oil. Next, add the garlic and onion. Stir for about 30 seconds or until fragrant.

Step 2

Next, add the rice. (Be sure you’ve rinsed the rice beforehand.) Stir for one minute. (DO NOT let the rice brown one bit!)

Step 3

Add the water.

Step 4

Next, add the chicken bouillon, lime juice, chopped cilantro and carrots. Gently stir all of the ingredients until the chicken bouillon dissolves.

Step 5

This is THE MOST critical step – taste the water. It should taste limey and full of flavor.

Step 6

Second most critical step. Cover and let the rice simmer for ~20 minutes over low heat. Keep an eye on it because you want to turn the stove off as soon as you notice the rice is fluffy and very little water is left at the surface. The rice will continue absorbing the small amount of water that is left at the top if you leave it covered but the stove off. (This will help prevent the rice from burning.)

Step 7

Serve with a main dish and enjoy!
