Black Bean Patties over Arugula

Happy, happy hump day! Hope you had a lovely day. I know things are tough right now but we can still manage to control our attitude and make the best of hard circumstances. My intention through this whole thing is to focus on positivity and spread it through my blog or IG. (So if you’re seeking for a little light – I gotchu, gf!)

Here is tonight’s recipe! I know, I know. Please don’t hate me. It has been SO long since my last recipe, but the truth is, I stopped cooking for a while. Life before this was pretty intense. Work, work, work. House, house, house. Work, work, work. And to be honest with you, I enjoyed my days off, LOL! I did NOT miss cooking. But since circumstances have changed, I am back in the kitchen…for now…so don’t get excited, Jose.

Anyway, this Black Bean Patties over Arugula recipe is a favorite of ours because it’s meatless and pretty healthy! We are not vegetarians by any means but we do like to take breaks from eating chicken or steak.

Ingredients for ~4 servings:

  • 2 cups of cooked black beans (I’ll share how to cook black beans from scratch below, but please, feel free to use canned beans too.)
  • 1 egg
  • 1/2 teaspoon of cumin
  • 1 tablespoon of chili powder
  • 1/2 teaspoon of minced garlic
  • 1 roma tomato, finely chopped
  • 1 jalapeño, finely chopped
  • Green onion, to taste, finely chopped
  • 1/2 cup of bread crumbs

Step 1

Over low heat, in a medium pan, mash the beans.

Step 2

Once the beans are mashed, add the following ingredients: garlic, tomato, jalapeño, and green onion. Stir until all of the ingredients are well blended.

Step 3

Move the bean mixture to a large bowl. In a small bowl, mix the following ingredients until well blended: egg, cumin, and chili powder. Add the egg mixture to the mashed beans. Slowly add the bread crumbs and mix. Keep adding the bread crumbs until the bean mixture becomes sticky.

Step 4

Mold the bean mixture into perfectly round patties. In a medium pan, over low heat, add olive oil and grill the patties until golden brown on each side.

Step 5

Prepare the bed of arugula by tossing the arugula in a bowl and adding: salt, pepper, and olive oil, to taste. Place the arugula on a plate and place the patty on top.

If you love avocado as much as I do, neatly cut up some slices and place them on top of the patty. Enjoy!

How to Cook Black Beans from Scratch

  1. 1 cup of black beans
  2. 4 cups of water (maybe more as beans begin to absorb the water while cooking)
  3. 1 tsp of salt, or to taste
  4. 2 garlic cloves, whole

Sort through the beans and ensure your batch doesn’t include little rocks. Rinse the beans and set aside. Over medium heat, boil the 4 cups of water. Once the water boils, add the beans, salt, and garlic. Lower temperature and cook for approximately two hours. You may need to add water (and salt) as the beans begin to absorb the water during the simmering process.
