Well, as promised, here is my favorite banana bread recipe. The original recipe is linked here – I’ve tried this recipe several times, and one day, I decided to play a bit. I tossed in a few extra ingredients that I thought would go with the fall theme and here is what I came up with:
- 2 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/2 cup of butter
- 3/4 cup of brown sugar
- 2 eggs, beaten
- 2 1/3 cups of mashed overripe bananas
- 1/2 cup of green apple, chopped
- 1/2 cup of oats
- Cinnamon, to taste
- Crushed pecans, to taste
Preheat oven to 350 degrees and lightly grease a loaf pan.
In a large bowl, mix the flour, baking soda, salt, butter, and brown sugar.
In a small bowl, mash the bananas until well blended. Stir in the eggs and continue mixing until the ingredients are well blended.
Pour the banana mix into the large bowl and mix until smooth.
Add the apples and oats to the mixture – blend until smooth.
Pour the mixture into the loaf pan and top with cinnamon and crushed pecans.
Bake for approximately 45 minutes to one hour. To check if the banana bread is fully cooked, insert a toothpick and ensure it comes back clean. Serve warm.
